The Judd Family's Special Sugar Cookies

1 1/4 cups butter -- at room temperature
2/3 cup sugar
2 large eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
In a medium bowl with an electric mixer at medium speed, beat the
butteruntil smooth and creamy, about 3 minutes.
Gradually beat in the sugar until light and fluffy, 3-4 minutes.
Beat in the eggs and vanilla.
Onto a sheet of waxed paper, sift together the flour, baking powder and
salt.
On low speed, beat the flour mixture into the butter mixture until well
blended.
Flatten the dough into a 1/2"-thick disk. Place on a plate, cover with
plastic wrap, and refrigerate until thoroughly chilled, about 3 hours.
Preheat oven to 375ºF.
On a lightly floured surface, with a lightly floured rolling pin, roll out
the dough to 1/8" thickness.
Using 2 1/2"-3" cookie cutters, cut into desired shapes. Gather the scraps,
reroll and cut out more cookies.
Place cookies on ungreased baking sheet.
Bake until lightly golden, 8-10minutes. Cool 1-2 minutes on the baking
sheets on wire racks. Transfer
cookies to the racks to cool.
Decorate as desired.
Store in an airtight container.
