Tiramisz
1 pound mascarpone cream
1 9x13 aluminum pan
30-36 lady fingers, enough to cover two layers
1-1/2 cups of espresso coffee
1 cup of heavy cream (40% fat)
5 egg yolks
7 tablespoons of sugar
1 cup of sugar
3-4 oz. of white rum
Dark cocoa powder (enough to sprinkle)
Add 7 tablespoons of sugar and rum to coffee. Stir well and set aside. In 5
quart mixer, add egg yolks and 1 cup sugar. Mix until white and fluffy. Add cup
of cream and mix until stiff. Add mascarpone at slow speed and mix until it
begins to stiffen. Then cover bottom of baking pan with 1 layer of lady fingers.
Soak with coffee mixture (but not too wet.) Don't use all the coffee mixture,
you need some for the second layer. Spread half of the mascarpone mixture over
the lady fingers. Repeat with second layer of lady fingers and use remaining
mascarpone. Sprinkle cocoa powder to cover top. Refrigerate for 24 hours.
